
Vegetable Stuffed
VICTORY Peppers
.(slow cooker recipe)
..
1 10-oz pkg frozen corn
1 15-oz can red kidney beans, drained and rinsed
1 28-oz can crushed tomatoes
1/2 cup salsa
1 small onion, chopped
1 1/2 cups cooked rice
1 tblsp Worcestershire sauce
1/4 tsp salt
1/2 tsp pepper
2 cups shredded cheddar cheese
4 small yellow or red peppers, tops removed and seeded
- Combine all ingredients except peppers.
- Stuff peppers to top; arrange in slow cooker.
- Cover; cook on low 6-8 hours (high: 3-4 hours)
This recipe doubles well if a large slow cooker is being used. Also, there always seems to be more filling than peppers and room in the slow cooker, ergo there is usually enough filling left over to fill a small batch of peppers a few days later. Ingredient amounts need not be exact...adjust to taste!
