What's for dinner tonight? Tunanoonoo!!! This has become one of our favorite comfort foods... and it's great on a chilly winter night. It is a lasagne of sorts... doubling as tuna and noodles. I'm not quite sure where I got the idea but we love it and it has been in our 'dinner rotation' for several years. Barilla flat lasagne noodles work great for this... no boiling required!
Ingredients:
1 box Barilla lasagne noodles
1 12-oz can Albarcore tuna
1 10.75-oz can cream of mushroom soup
12-oz small curd cottage cheese
1 carton sliced mushrooms
1 red bell pepper, finely diced
8-oz frozen peas
1 6-oz package shredded parmesan
- Mix together the tuna, soup, and cottage cheese.
- Dice the bell pepper.
- Spread a thin layer of tuna mixture in 9"x 13" baking dish.
- Place one layer of lasagne noodles.
- Cover with 1/3 of tuna mixture, red pepper, peas and parmesan.
- Place a second layer of noodles.
- Cover with 1/3 of tuna mixture, red pepper, peas and parmesan.
- Place a third layer of noodles.
- Cover with remaining tuna mixture, red pepper, peas and parmesan.
- Between layers, sprinkle cracked pepper to taste.
- Bake according to lasagne directions on box.
