what's for dinner tonight?

Chicken Cacciatore
slow cooker recipe

* This is a new recipe to me, but it has been given a stamp of approval by a friend whose cooking skills and repertoire are vast and creative... and he's a slow cooker buff!

Ingredients:

1 cup chopped onion
1 cup chopped green bell pepper
3 medium cloves garlic minced
3 tablespoons olive oil
2 cans (14.5 ounces) stewed tomatoes
2 teaspoons leaf oregano, crumbled
2 teaspoons salt
1/2 teaspoon pepper, or to taste
1 bay leaf
pinch of red pepper flakes
2 tablespoons tapioca
3 cubes chicken bullion
3 pounds cubed chicken
3/4 cup dry red wine
1 cup coarsely chopped mushrooms

Just toss everything in the slow cooker and set it on low for 10 to 12 hours! We'll be enjoying this over brown rice this evening, although it would be lovely over a bowl of angel hair or thin spaghetti, as well. Also... I took creative license and tossed in a can of Rotel. So far, it smells divine!
